Why on earth doesn't the english version have these covers??? These are beautiful as opposed to the english versions that are uuuugly! (and the colors of that rule book, eeeeek! looks like a CGA computer game in 4 colors)

It's not just the English version. I've seen other versions that have the same nasty covers as we get. It appears to be just the German version with these beautiful covers. My understanding is that the german publisher decded to commision new artwork for the box. Since they paid for it, only they get it.
The logo font is not even really Medieval and quite frankly just annoying how the "O's" are looping around the other letters... it might be clever if it had something to do with the game, but as far as I know it doesn't. Also the colors and design of the rulebook is seriously sub-par... pink? c'mon guys. Need to get a decent size picture (300 dpi) of the German covers oh BGG so that we can print and paste over our old boxes.
Our fiest German edition was also the ugly one that you have with RGG. As the game did not well well with that ugly and aggressive cover, Hans im Glück decided to contact another graphics designer to design a new cover. However, the cards will still have (and they do in Intrigue!) the same back with the old Dominion logo with those large O's. this is due to compatibility reasons, so that customers of the 1st edition won't be pissed off that they're expansion has another card back.
As far as I know, Seaside will fit to the right side of the basegame. I've seen a picture somewhere where all of the covers were presented together.

The new french edition has these beautiful covers as well. The original edition (now sold out) featured the original English cover box (the ugly one ). So, it's not reserved to lucky Germans.
