The 2005 AH verision apparantly comes with 4 2-sided boards, which would be a total of 8 sides. I only see 6 sides listed in your picture from the original packages.

The listing for the 2005 version on strategy page shows 4 of the 8 sides:

Those 4 sides are not found in your picture.

I'm about to buy this for the first time, and I'm very confused about which sides I will get.

As indicated by a previous post, the image is from the original WOTC edition, in which 6 levels were provided. If you look at the image, the first 6, labeled 1-Roborally-BoardName are the original game. The rest are the WOTC expansions, labeled 2345-Expansion-BoardName.

Are these boards constructed from paper sheets or are they sturdy cardboard boards?

The original game has very thick gameboard type boards, one sided. The new 2005 RR edition has paperboard thick double sided boards. Thick enough that you probably wont have issues with it, but not nearly as nice as the original boards.
