One my favourite distractions at the office is thinking about what I'm going to cook for dinner tonight. I love good food and I love cooking. I enjoy planning delicious meals and somehow thinking about one for a few minutes (or hours!) during the day increases my enjoyment when eating.

So, Chit Chat, my question to you is, what are you making for dinner tonight?

I'll be making something like this:

Fried chicken pizza!

crab cakes I think, bought a pair from the store (their deli does a decent job) on sale yesterday but I'm not sure how I want to round out the meal. I'm thinking corn on the cob. any suggestions?

As if I knew at lunchtime what would be for dinner!

Dinner magically appears on the table every evening. I find it best not to question the details and just thank my wife and tell her how delicious it is.

The BGG Culinary guild did a recipe exchange last year and several of us have made Octavian's Insanely Good Eggplant Parm.
The recipe is in the comments (1st one) under the list item.

I actually made it myself and posted a comment about it in another thread, that I can't find right now here, but it was one of the most popular recipes that was duplicated by several people.

Sauteed fish (I'll know which type after I get to the market) with a lovely picatta sauce, a nice risotto, fresh broccoli,a tossed garden salad, and a wonderful, very-dry, Riesling.

And, an hour or so later we'll have fresh berries over homemade ice cream with coffee(decaf).

Pasta "Mamma Rosa"

Melt a little butter
Add whipped cream and grated Parmesan cheese
Add salt, pepper and muscat
Let it simmer for a few minutes
Add tomato sauce and fresh herbs, maybe a shot of balsamic vinegar
Mix with freshly cooked pasta and serve

Awesome dinner in 20 minutes (and that includes getting the herbs from the garden).

I will cook up a batch of burritos, eat one and freeze the rest.

Edit: I ran out of tortillas before I ran out of filling, so I froze a bunch of burritos and just had burrito filling with Fritos for dinner. It looked a bit like a pile of poo on a plate, but it was tasty.
