I've only recently begun working with foam core and already created a bunch of inserts.

I tried cutting foam board at a 45° recently with a regular knife and ruler, but it always turns out pretty messy. I'd like to do that in order to create trays from which it will be easier to remove components, because I learned that sometimes it can get a bit fumbly with a regular tray composed of 90° 'walls'.

Is there a trick to doing that easily with a knife, or would I need a new tool for that? If so, which tool in particular?

I think you would want a tool like this:
https://www.amazon.com/US-Art-Supply-Degree-Cutter/dp/B01F7I...

Perhaps try to ask a local art store, as I'm having trouble searching well enough to find a good product

edit add, here looks like a good 1

Extreme patience or A V-Groove Cutter Might Work.

They're not exactly cheap in the U.S. and like the video shows, work best with the not included rail system.

To which one of "those" are you referring?

Band saw with a mitre sled. You never realize how many things a band saw is good for until you own one.
