I could use the token to not have very few cards in play? especially in four players. Any suggestion ? Thanks

Yes, you can use cubes or tokens for tracking the number of goods on buildings.

Is this the way that one should play?

I had thought perhaps that taking cards out of play (when they become goods) was somehow part of how the game was supposed to work.

Would it be better to play the game by never drawing face-down cards when producing and instead placing tokens or counters on the production building?

Use of a production chain would then involve moving the tokens or counters from one building to another.

Whereas it's important in Port Royal to use cards as money, so that some cards are out of the game, I don't see this argument in Oh My Goods.

Using cubes as goods changes the game a tiny bit, but I don't see any disadvantages. I sometimes played with cubes as well and it increases your overview.
