My only complaint about the new anniversary edition is that I prefer the shiny woodgrain appearance of the prisoner and guard pawns of the original. The pawns in the new one are fine, but my personal preference is the originals.

Is there something I can coat them with to make them appear more shiny/glossy like the original pawns?

How about a quick rattle can spray of HIGH GLOSS Clear made by Krylon?

It would have been nice if the new game had miniatures instead of
pawns, especially with the quality that is being produced now?

We used Esci 1/72 German infantry for the guards, originally produced in matt black.

Hmmm... Interesting! Does the base of 1/72 scale fit within the circles on the board?

As a reproduction of the original game, I don't mind them keeping the pawns. Just wish they had been as sleek and nice looking as the original pawns is all. A very minor complaint though. A nitpick for sure. This is truly a great edition of this game!
