My wife ADORES this movie and I don't have what I would consider any cool nautical games... something challenging and gritty that really reminds you of the movie Master & Commander ya know?

Any thoughts?

It's been a while since I've seen that movie, but I think Empires at Sea might be a good fit. In this game, every player represents a nation in the golden age of sailing, launching ships, exploring, settling harbors, attacking etc. There is also a pirate ship that can be bribed by the players for control. What makes this game unique (in my humble opinion) is that each turn you turn over a card from the weather deck (which determins in which direction(s) you can and can't sail that turn) and a history deck (which has some historical events affecting different nations, for instance when the French revolution breaks out, France can't produce resources that turn).

If you enjoy combat and tactical strategy, there are several good miniatures games like Sails of Glory or even Master and Commander.

Old school, but Wooden Ships & Iron Men (WSIM) or maybe Close Action (a more advanced version of WSIM). These are generally reckoned the best Age of Sail games to date.
