Here is a suggestion where you can play multiple games and keep score.

Play a number of games equal to the number of players.
Each player starts first in one of the games.
At the end of each game, score the number-value of the cards in your hand and in front of you.
At the end, the player with the lowest score, wins.

It changes the game a little bit, since now it is a little risky to hold high number cards closer to the end of each game.

I have tried it a couple of times now. It adds the additional element that you don't want to end up with high cards at the end. It is a very interesting balance of choices that you need to do when you are with 3 or fewer cards.
Still I think that possibly this variant may not be in accordance with the original spirit of the game because it adds some complexity as you try to go out and at the same time not to end up with high cards (these two things are contradictory in the standard game).
