I have the German-language version of the game and expansion. The expansion includes three extra cubes each of Sand, Wood, and Stone, plus one extra Metal. I cannot find anywhere in the rules translation how many extra cubes you add with five or six players. Do you add all 10 with five and six, or fewer with five?

Just add all of them. Resources are not meant to be limited by the components in this game, so it doesn't matter whether they're in or out.
