Here it is the first translation helped by Google translator:

"At the beginning of the game all players together decide if using "Heuriger" and "Field Blend". If so, for each of them substitute 3 improvement tiles of the same category. There must be 8 kind of improvement tiles in play".

"Heuriger - For each wine cube in the first bottle barrel of your cellar you gain 1 prestige point".

"Field Blend - You can take any 2 wine cubes from the first bottle barrel of your cellar and substitute them with any wine cube taken from supply. You can take a cube also if it doesn't match a variety produced by your vineyard".

I hope someone will help correcting any error present in my translation...

If you change "bottle" to "barrel", the translation seems ok with me.

What do they replace? How are the improvement tiles that are removed (and replaced by the new tiles) selected?

Before the game starts you either randomly select or choose which 8 kinds of improvement tiles should be in the game. The method with which you do that is up to you. Only thing important is, that each player knows which tiles are in the game. Then remove all the innovation tiles, that do not participate from the stack.
Every game should be played with 8 kinds of improvements. Otherwise the improvements/grapevines ratio gets a little out of hand.
