When roaming monsters are defeated, is their card removed from the roaming monsters track? My apologies if this was covered in the rules and I missed it.

Yes, the card is removed.

(It's not explicitly covered in the rules... but you should treat a roaming monster battle exactly like a normal encounter except for not receiving any experience for victory.)
