The rulebook says "discarding any card from his hand" but the way it is phrased it sounds like it may be a typo, and the intention is to discard as many cards as desired.
Yes, you can discard as many cards as you want, but you still only draw new cards according to your Replenishment rating and up to a maximum of five.
