I play this way with my daughter. She uses the normal rules, I handicap myself at one level until she is competitive.

Level 1: Random card play, random chip selection (roll die).

Level 2: Random card play (hand unseen), normal chip selection.

(All remaining levels use normal chip selection)

Level 3: Hand visible and unsorted, play rightmost card only.

Level 4: Hand visible and unsorted, play either leftmost or rightmost card only.

I suspect Level 3 and 4 would actually work as a legitimate variant, if a bit random (especially Level 3).
