Just to be sure We are playing are first game tonight.
I understand you don't need to put workers in the same space as a Moai when you start to move them. But those this mean the Moai can end is movement in a space without worker also?

No, you need enough workers to move it to a new space.

The Rules State Pass Through a hex with that many(1,2,3) workers so I don't get why you would stop on the last hex with worker

Stefan is correct. You can't move a Moai into a hex unless there are sufficient workers/logs to move the Moai.
