I have understood when a round ends but my question is if each time the round ends you hacvce to shuffle the deck and re-start a new round with a new deck

Yes. After each round, you start a new one shuffling the full deck and deailing 5 cards to each player.

Indeed in italian rules translation is inot indicated that at the end of each round you have to form a new deck. But I would like to be sure

Another way to look at it is that:
Round 2 resets everything to the same as the start of Round 1, with the sole exceptions of: Someone has a point. The start player changes.
So you start Round 2 (and 3,4, and so on) with a freshly shuffled deck just like you start Round 1 with one.
Our iPhone version puts all the cards back into the deck, shuffles and deals. This was approved by Dr. Reiner Knizia so I'm certain it's what's supposed to happen.
Indeed, we have put the caption "Shuffling" on screen just because one tester wondered if watching the order in which cards returned to the deck would help in the next round.
