I've just bought this expansion and I found something about green cards I don't really understand:

1. Can I use Cat Balou or Panic (or other cards with same effect) on played green cards?

2. Is it a must to use the played green card?
e.g. I am Suzy Lafayette with a played Iron Plate, and only one card (a Missed) in my hand, can I use Missed and draw a card instead of using the Iron Plate when targeted by a Bang?

3. When can I use a played Canteen? Can I use it out of my turn (not for reviving)?
e.g. If I am attacked to 3HP left and a Dynamite is coming

Thank you very much

1.) Yes, it is kind of the point that you have to put these out in the open.

2.) No. They are treated as a card from your hand so you don't have to play them. The only requirement is that they have to be out to be used.

3.) No, I don't think you can. I believe it has been clarified that only "Beer" cards can be used out of turn and only when dying.
