After roles are assigned, instead of being randomly assigned 1 character card, each player is dealt 2-3 character cards (depending on # of players and preference) and chooses one.

I believe this drafting style gives you more options to fit your role better.

Never played it any other way. Each player is delt 2 cards, one he chooses for his character, the other is used to keep track of the life points.

This is well known variant.
But I don't recommend it if you don't know characters. We were using this at the beginnig and we were missing some quite good abilities just because they don't look so good.
I think the best way is to deel only 1 character for neebies, but deel 2-3 for experienced players.
