I've noticed there is another tile that has a trading post it. Can this be used to trade from instead of heading back to the starting tile trading post?

Yes. There are actually two triangular-shaped tiles with trading post. But they are not always drawn. Triangular tiles are usually hard to place. Usually we use around 3-4 such tiles per game.

if you like to have more triangles in play you can use a variant:
after exploring the river: if you are able to place a triangle, which is not touching a triangle, which has been placed before, you may draw and place one.
this brings a bit more spice in the landscape.

3-4 tiles per game is a lot! I think I might have played 1-2 tiles EVER.

It is really hard to set the board up to get the triangles and I think the only way we were ever able to do it, was to trap a triangle against the starting tile.

There are other ways. One is to move along the unexplored side of the river which is already explored on the other side - often there are possibilities for triangles if the river bends towards you. Also do not forget that the mountain range that is on the starting tile is supposed to run indefinitely both ways - so if you move away from the river and towards this mountain range, you can often place a triangle there. And finally, when you move away from the river at one place and then make a bend and return to it at another place (or if the river itself makes a bend) then there also often is a possibility for a triangle.
