The rules clearly say you can only play one Bang! card. My question is, does that mean ONLY those actual cards that say "Bang!" or ALL cards that have the Bang! symbol.

So, could I play a "Bang!" card to shoot someone, then use a Punch Card followed by a Gatling card to damage them two more times in one turn, or is that a no-no?

You are correct.

You may only play one card with the word, "Bang" on it per turn (unless you have the Volcanic), but you may play as many cards as you wish which have the effect of a Bang card, such as Indians, Gatling, Punch, etc.

Every card has advantage and disadvantage.
Bang! card has a limit of one per turn but you can use it in Duel and Injuns.
Other cards with bang! effect have no limit but remember that you can't use them in Duel/Injuns.
