Where do you draw the line?

Profits.

Color + Symbol looks like the way to go. Say Anything... Ingenious... Ticket to Ride... they're all examples of game components that don't cost anything to accomodate color-blindness. And, since 8% of men are colorblind, and most hobby games are played by men, that's a good return on a non-existant investment.

OTOH, Since I'm not a Eurogamer, I don't know what to say with games with cubes. Wooden cubes are more aesthetically pleasing and less fiddly than cardboard chits. Cubes are cheaper than different shapes. Agricola has custom-shaped wooden pieces available, and Carcassonne has its sticker sheet. Maybe if the games themselves cannot accomodate color blind gamers, the "bling" can certainly help them out.
