Is there a way to completely block me from seeing all posts by a user, including things such as uploads to the image gallery?

Click that icon to the right of the envelope, under the user's name, and then click the "X" at the bottom of the menu.
I don't know whether it will hide image uploads, however. I do know that you can still see the text of their posts if someone else quotes them.
Just make sure you don't comment on which users you have blocked - you can have your posting rights revoked for doing it.

For safety, I would assume that the rules governing the inability to reveal a user you have blocked, also apply to obliterating them with a small rocket ship. Have fun!

Also in that menu, drop down the arrow next to subscribe and hit block - this will prevent their contributions from showing in your subscriptions.
Neither action will stop you from seeing images if you're browsing a gallery.
