We have played with them in a few times, and it just adds more beans. The removed cards are so rare that it does not pay to base a strategy around them, yet if you get luck then good for you.
The point is there are so few of them and you need at least 2 to gain any gold. And once harvested, they are out of the game for good (anything cashed in during the 2-player will not get recycled in when you purchase a 3rd field) so the left over becomes a completely dead card.
The chances of having 2, let alone 3 (or 4 in the case of the Cocoa) makes them very difficult to do anything with. And if they get discarded due to a rejected offer, they end up clogging the discard pile and effectively make any card under it dead as well.
So it is more about them mucking up the mechanics of a 2-player game instead of the cards themselves being some killer strategy or super set of points. You have to take Uwe at his word that he played enough games to see it as a problem and that the variant is better without these two cards.
