We have Habeneros with our burritos all the time. We usually average about half a hab per burrito. Then we add some extra habenero sauce on top.

Next time, get a small box of vinyl gloves at the pharmacy and wear them while you're handling the peppers. Don't touch anything put peppers and the knife with the gloves on! Trash them when you're done.

I thought that the Trinidad Scorpion Butch T had overtaken the Naga as the hottest pepper? Or did the Naga wrest the title back?

Also, food processors are your friend. You just de-stem them a boom, no touchy touchy.

That batch had 16 Habaneros for a less than a pint. I am now making it with 25 (red ones, when I can fond them), and a few Serranos for flavor.

Which was used to make the 'killer curry' for an Edinburgh restaurant competition that ended up hospitalising some of the contestants gulp
