Here are some games that feature a "hot potato"-style of gameplay, i.e. there's a hot potato of some sort that gets passed around and which you don't want to be holding when time runs out or some other trigger happens.

In this game, the hot potato is a "hex" token which makes you lose points if it blows up when it's on you. Each player has a hand of cards that you use to get rid of the hex when it's passed to you -- by passing it to another player (e.g. to your left, to your right, across the table). You can also do special moves like splitting the hex in two. It's played in rounds, with the winner of each round getting to make up a (often silly) house rule for the next round.

There's an expansion called Hex Hex Next.

There's a stack of circular cards, each of which has a different collection of symbols arranged so that every pair of cards in the game have exactly one matching symbol between them. In the "hot potato" mode of the game, each player holds a stack of cards in their hands face-up. Then it's a race to spot matches between your topmost card and any of the other players' topmost cards. Any player than calls out a match immediately moves his or her card onto the matching player's stack. Play continues in real-time, with cards moving about as players spot and call out matches. First to get rid of all of his or her cards wins.

This may be a bit of a stretch, but the thief is sort of like a "hot potato." There's just one, no one wants it, and it gets tossed around during the game.

A Kickstarter game published this year, self-described as "a light hot-potato-passing party card game for 4-8 scoundrels." The hot potato is a impressionable executioner. You are trying to kill off your opponents while avoiding the same fate yourself.

When one player finishes his or her turn, the turn-token is passed to the next player who does not already have one. This is another blurry case:
Fluxx has many "keepers" which are good and can help you win, and also a few "creepers" which are (usually) bad and prevent you from winning, and generally you try to get rid of creepers. (But there are a few special situations when having a creeper is good and can help you win... so I won't be bothered if you want to delete this entry as not being what you're looking for...)

The archaeological card has "hot potato" movement: whoever picks up the last archaeological token gets it. Each token is -1VP while the card is an additional -2VP.
