You're walking through the desert on your way to the FLGS. It's hot, because it's a desert, and you regret not just driving into town like you usually do.

But then you see a lamp sticking out of a sand dune.

"A lamp!" You think, "I have literally no use for this"

But then you grab it because I said so. And a genie comes out.

"Foolish mortal," the genie says, and at first you imagine he's pointing out the stupidity of taking the desert route to your FLGS. "You have disturbed my slumber, so I shall lay a curse unto you.

"From now on, you may only play games beginning with a single letter of the alphabet. You can choose the letter, but that'll be it, forever, or until you find another genie or something"

That's easy, you think, and open your mouth-

The genie stops you. "'The' doesn't count"

You take a deep breath.

Which letter do you choose? (And for which games)

I'd pick P.

I don't think I've played enough games to make this decision well, but I think even between Pandemic, Power Grid, Puerto Rico I'd do pretty okay. I'm missing fillers here, but it's a good start. Plus all those Power Grid maps.

Wow, this is a tough one. Chess definitely has to be the tiebreaker though, because, well, it's chess. Also beginning with "c": Commands & Colors: Ancients, Commands & Colors: Napoleonics, Can't Stop, Conflict of Heroes: Awakening the Bear! – Russia 1941-42, Cosmic Encounter, and Circus Maximus.

Some runners-up:

"p": Paths of Glory, Pirate's Cove, Pandemic, Power Grid (and all its spin-off games), The Princes of Florence, and Puerto Rico

"s": Scrabble, Catan, Shadow Hunters, Small World, Starfarers of Catan, and Stone Age

"t": Twilight Struggle, Titan, Through the Ages: A Story of Civilization, Thurn and Taxis, Triumph of Chaos, and Ticket to Ride (and all its spin-offs)

This is a difficult choice. Propably I would choose the 'T'.

Terra Mystica
Through the Ages
Tichu
Thebes

Also 'C' would have been a good choice too.
(Chess, Caylus, Concordia, Catan,...)

I'd choose A.

That would leave me with the following games:
Age of Steam, one of my favorites, and it has dozens of expansion maps,
Arkadia, which is a gem of a game that is perfect for my tastes,
the classic Acquire, which is so beautifully simple and elegant, and perfect for playing with casual gamers (the game that everyone should own instead of Monopoly)
Amun-Re, I love Knizia's heavier classic games, so it's a shame that only one starts with A,
Age of Empires III: The Age of Discovery, a fine euro-ish game with some ameritrash sensibilities (including lots of plastic figures),
Alhambra, a game which my less hardcore husband likes to suggest that I enjoy as well
Airlines Europe, a stock majorities game by Alan Moon that can be introduced as the next step up after Ticket to Ride,
Agricola: All Creatures Big and Small, which is an excellent couples game
Aton another excellent 2 player game to play with my husband

My runner-up letter would be T for Twilight Struggle, Tigris & Euphrates, Taj Mahal, Traumfabrik, Through the Desert, the various Ticket to Rides, Thor, Terra Nova, and Taboo

I would laugh in the genie's face! Good thing Genie's wishes tend to be literal. ALL my games start with a SINGLE letter...in fact all words start with a single letter or are a single letter. Since he didn't say it had to be the SAME letter I could continue to play anything I want. Now I can cross off outsmarting a genie from my bucket list.

Sports games: Breaking Away, lots of Baseball games

Beer & Pretzel: Blood Feud New York, Brief History of the World
Horror: Betrayal at House on the Hill
Bowen Simmons- Bonaparte at Marengo & Baptism at Bull Run (another designer but based on BaM)

Letter G was a close 2nd with "Guns of...." covering a lot of war games
