More than 95% of the games I play are 2P matches with my wife. That being that case, I utilize a fair amount of 2P variants to maximize the use of my entire collection. Here is a list of the 2P variants I use. Feel free to add your own!

DISCLAIMER: A number of these variants are ones that I have made.

This is the first 2P variant I submitted to the Geek. It simply removes some of the spots a Master Builder can e placed to tighten up the board. I think it works pretty well - we likely would never play PotE 2P without this. There is some good discussion on this thread about other variants as well.

This is another variant of mine. It introduces a secondary market that allows indirect trading to take place between the two players. I'm not a big fan of the Bean Duel, so I think this is an improvement on the original rules - it allows for some interesting decisions about what to bid with, plant, and bid on.

2P LCtBG loses a lot of tension found with 3 or 4 players. To solve this problem, I suggest in this variant to remove both points and artifacts from the board as players pass them. I prefer LC with 2, but my wife really love LCtBG, so we still bring it out from time to time.

Simple variant that basically compressed two rounds into one (each player plays two civ cards and bids on two monkeys each round). I find that it allows for more a little more control in the 2P game. Still prefer it with 3 players though, to be honest.

Each player controls two color's worth of money. However, only one of their colors bids each round. Each player counts up their two color's scores, highest score wins. Just like the original rules, the color with the least money doesn't count (that player will only count their other color's winnings) There are better 2P bidding games (Ra, for instance), but this one is fun and it plays quickly.

I'm not sure who came up with this idea first, so I'm linking to the thread I saw it mentioned in first. It's simple - use the team rules, but each player controls two adjacent boards. I've heard it mentioned that the Free City variant is more strategic, but I find it fiddly and tedious. I don't play 7 Wonders for its deep strategy anyway.

The designer's variant. The distribution of piles is a little different, and you take out an additional color from the deck. Works very well, similar length/weight to Lost Cities.

The distribution of sun tiles and the amount of RA tiles it takes to end a round are logical progressions from the base game. The non-obvious (yet very important) tweak is removing the negative scoring (since in a 2P game you are essentially pharaohs and suns twice, which unbalances the scoring). Works wonderfully!

Takes a little work to remove all the tiles, but since I play this with only 2P anyway it's not a big deal. Two bids per turn but only one casino is a smart design. I love VS, so I was really happy to find a 2P variant that works.

I wanted this game forever because it looks so beautiful, but the 3-4 player count always put me off.
I saw the 2-player variant in the files forum (http://www.boardgamegeek.com/filepage/652/medina-for-2-playe...), and I took a chance and bought the game.

I love the 2-player variant even more than the regular game. It's such a tough decision to know when to put your roof, or the blockade dome.

I haven't played it this with the normal player count, but I really enjoy the variant where you remove 3 cities from the game.

Me and my wife enjoy playing this as a 2 player game. If you play three rounds like the rules say with only 2 players both players can get all 8 of their pizzas made. So we only play 2 rounds which makes it play just right. I think I read something later on that there was rules that were added about removing some ingredient cards with fewer players but that was not in our edition of the rules. Playing only two rounds with 2 players works just fine though.
