Great games with excelent mechanics to minimize downtime

These are all very good games (8 to 10 on my scale) that have significant complexity but minimize downtime. Most do this by having players take several shorter turns in sequence during the game.

Each round consists of players in-turn choosing an action phase that they begin and each players follows. Good variety given that there are more actions to choose than there are players.

It's a game played in turns, but every turn has a trading phase that everyone in the game is probably interested in. This is because the trading phase is structured so that you don't just want to gain beans but also get rid of them. The effectiveness of this is demonstrated by how well the game scales from 3 to 6 players.
