As a result of the Omega Virus entry below (which see), I emphasize that I'm looking for game boards that have a particularly unusual concept or design, not just visually arresting. There would still be a fair amount of overlap between mine and Mark's list.

One of the games that seems to support the Plastic Gameboards Rule as it relates to a game's going price on eBay and elsewhere: The more plastic in the gameboard, the higher the price.

As the game progresses, each of the four segments of the space station board are 'shut-down', until players are finally restricted to only 1/4 of the board.

Looking up this game resulted in discovering a Geeklist by Mark Meredith entitled Games with Interesting Boards.

There are two road segments to this straight race course. As soon as a player's car exit's the forward edge, the rear road section is picked up and attached to the front, forming a never-ending road. Any player's car that is still on the back section when it disappears is out of the race.

A combination of a regular hex-grid board and Tile-Laying.
As the game progresses, the Spirit of Evil attacks the Islands every 20 turns. A successful attack causes one of the eighteen Elvish Island tiles to be flipped over to it's black side for the rest of the game. This can invalidate quests and cause demons to pop up in other island tiles. Worst, if the player's Wizard was unfortunate enough to be standing on the tile when it flipped, his Wizard is teleported into the Dragon's Lair island/tile.

One of the Pseudo-3D board designs around. i.e. a game that attempts to simulate movement in 3 dimensions on a flat gameboard by assigning positive and negative 'altitudes' to the game pieces relative to the board's plane.
In this case, each large hex has 11 smaller, different sized circles. They are arranged in a spiral pattern from smallest to largest. Smallest circle is the -5 co-ordinate, Largest is the +5, the fifth circle in the middle of the spiral is the 0 co-ordinate on the board's plane.

This system was re-used in Holy War by Metagaming, also by the same designer Lynn Willis.

Perhaps the earliest Pseudo-3D game. Board grid is comprised of a 3 by 4 grid of sectors. Each sector has two yellow and two red stars. The two Yellow Stars are located together in a sector directly above the sector with the two Red Stars. This effectively forms a playing area 4 by 3 by 2 sectors in volume.

Another Pseudo 3D design. This time, roughly simulating a 'sphere' of space.
Looking at the playing area in the picture, each concentric area from edge to centre, has a smaller diameter than the previous. But it also has a larger number of hexes above and below the 0 plane of the gameboard.

If you were to construct a 3D model of this, you'd end up with something that looks like 2 5-tiered, hexagonal Ziggurats attached to each other base-to-base.

The board is made up of two folding sections. At the start of the game, the outer halves of both sections are folded over top the inner halves so they form the initial 2-section region of the Kingdom.
When a player moves his token into one of the 2 Magic Whirlpools, he causes that board section to fold out, revealing a new 2-section portion of the board to play on.
Players can also use the Whirlpools to cause the board to fold back over.
In all, this gives 3 different arrangements of the Kingdom as the game progresses.

The board of this game is made as a 5 pieces jigsaw-puzzle (1 central and 4 at the corners - see the picture). So, no folds at all! The oldest game with this concept that I recall.

The board is some strange kind of plastic math. You unroll it on the table and it is perfectly flat, with no folds at all. Very handy, even if the rolled math makes for a quite large board.

This boardgame won the Unpublished Game Contest at the Lucca Games fair in 1995 or so. Publishing it as a boardgame was a bit too expensive so... Now it's a card game. Some of the cards are put in a circle on the table, and here we have the board!

On the board there were holes with a cardboard disk rotating under. When a duel was to be fought, plastic cowboys were put on those holes. You rotated the disk and when a hole in the disc passed under the plastic figure, it fell down across the board: they were shot and lost.

The early edition of Autoscooter had a wooden board, a very heavy carved wooden board, heavier than a bread-board even!

The map of Canada is formed by 8 Canadian Province pieces joined together in jigsaw fsshion. (New Brunswick, Nova Scotia, and Prince Edward Island are combined on one piece).
Game was published in 1977, during the time the Quebec Seperatist issue was fought between Canadian PM Pierre Trudeau and PQ Premier Rene Levesque.

Of all the board-gets-smaller-to-represent-something-sinking/blowing up/disintegrating games, I think this one is the most clever. I think it also has the best sense of humor!

This game, Pagoda, and Knockabout, all from Pair-of-Dice Games, all come on printed felt boards, packaged in cardboard tubes. When you want to store the game, you roll up the board, stuff it back in the tube, and put all the dice down the middle.

The flat board has a hole in the center. A vacuum-pressed plastic island fits in the center, with a mountainous ridge around the edges to hold gold bars, pearls, diamonds and barrels of rum. This was the coolest gameboard when I was a kid, at least until Mouse Trap was invented a few years later.

This game must be played in the dark and has a tower with a light that is red or blue depending on if it is day or night. Each light reflects different things on the board so you can be walking through a peaceful grassy area one moment and then the light is turned to night and all of a sudden the gameboard shows a haunted swamp. Many of the pieces that are placed on the board are also designed to make use of the different coloured lights.

This one is a combination of your #1 in that it takes place on the Titanic, and #4 in that the board slowly disappears, deck by deck, with players relocated up one deck if they're caught as the Titanic sinks!

I've been on this site for 15 years now, and I'm far from sick of games, but I think I prefer a better balance of favorites to new games. I'm also tired of playing 4+ hr multiplayer games, but I'll still happily play really long games 2 player.

Lots of games have gadgets. This is a gadget game in which the primary gadget is the board itself. Rotating disks within the thick gameboard secretly reconfigure each game so that all the oil wells have different depths.
