To me, Taj Mahal is one of the deepest I've played (along with all of the others on this list). I completely understand the game, and still manage to do poorly. And still come back for more. That says something.

Bridge is amazingly deep. Nobody has written the computer program that can beat world class human players, though I suspect it could be done by a similarly funded effort as that which produced Deep Blue for Chess.

By far the deepest game. Simpler rules that any eurogame, along with plenty of examples. Several booklets written on the strategy and tactics of the game. Organized tournament level play for over 30 years. No luck besides that of human psychology. One of the few games in our hobby that has become a mainstream game.
