PS: sorry for my english. I never wrote cooking recipies in english

-- EDIT --

Thank you for all thumbs, comments and geekgold It was fun making this GeekList - mm ... can you become addicted of making GeekLists? devil

First of all basic ingredients that you won't find in Wasabi! :
- Soy Sause: probably the most popular brand is Kikkoman
- Rice vinegar
- Some Nori - it's a seaweed in which you wrap rice and ingredients to form a Maki sushi
- Pickled ginger

You'll also need sharp knife and bamboo mat to wrap maki. You can probably buy all of this in a 'Make yourself sushi' set

So - what's more..

Of course sushi is all about raw fish. Most popular are salmon and tuna. As my wife is pregnant and can't eat raw fish most of our sushi was vegetarian but for me we bought a small piece of salmon.

Cut off the skin, and cut salmon into wide stripes. Leave some salmon if you'll want to make some nigiri (see below) with salmon.

Unfortunately this one piece was not as fresh as I would like. Remember to always buy fresh fish. If it smells like 'fish' it means it's not fresh

Some crab sticks will be great. Actually many of crab sticks (also called Surimi) in markets are not made of crab Actually they're made from... fish and made to look like crab sticks.

Shrimp for Nigiri sushi. You can buy a set of those ready for sushi - just as you see on a image to the left.

Avocado is my wife's favourite ingredient. Be sure that avocado is ripe - it should be soft. You can buy it earlier if it's hard and let it lie in warm place for one or two days.

Inside avocado there is a big seed. Cut the fruit around the seed (as you can see on a photo) Then twist two halves of avocado to separate those halves. Peel of the skin (it should come off without help of a knife if avocado is ripe). Cut avocado into stripes.

And our main hero: Wasabi!

You can buy ready wasabi paste in tubes or wasabi powder to mix with water. If you could buy real wasabi root - do it. Wasabi paste and powder is not made from wasabi - it's a mixture of horseradish, mustard, pepper etc - but it's still hot and green

And if you ever wondered if wasabi can come in cubes... it can:

But by far, the most important sushi ingredient is RICE. It has to be rice for sushi (not Uncle Ben's rice )

First of all you have to flush it with a lot of cold water (we had about 0.5kg of rice I think). Look how the water look like after first washing:

Repeat it until water is clear. Leave rice in water for about 10 minutes. Then you have to boil it. Yesterday we used rice cooker for the first time and rice was great. You can of course boil it in a pot. Pour rice (measure it with cups) and then pour water - exactly the same amount of cups as rice (or a little bit more - about 10% more). Cover the pot and do not uncover it until the end. Boil the water then shrink the fire under the pot and boil for about 10 minutes. After this time, rice should absorb all the water. Turn of the fire and leave rice for next 10 or 15 minutes.

Take out the rice into wooden bowl (it don't have to be wooden). Now we have to prepare spice. Take:
- 12 tbsp. of rice winegar
- 1.5-2 teaspoon of salt and 0.5 teaspoon of soy sauce (you can use 3 spoons of salt)
- About 8 teaspoons of sugar

Mix it together. Than pour it into the rice and stir the rice gently. Leave it to cool out. Try rice if it's good for you. If not.. start again

Ok.. let's make some sushi. Let's begin with maki. Take Nori put it on bamboo mat (you can cut nori into half (use scissors ) for smaller sushi).

Put some rice on it leaving small piece of nori on top. Rice will stick to your fingers for sure - take some water with vinegar to clean your fingers - then rice won't stick that badly

To make some maki put a little wasabi (I repat: a little to rice, and than put ingredients of your choice from 1 to 3 (more will be too much)). Than you have to wrap it as you can see below:

than
and

Grease the part of nori without rice on it, with water - then the seaweed will glue together so it won't fall apart

Now you can make all sort of sushi:

California Roll is special kind of sushi as rice is outside the seaweed. Just put rice all over nori, turn it over, put some igredients and scroll it.

With shrimp you can make Nigiri sushi (Nigiri means finger). Take some rice and form a roller with it. put some wasabi on it and a shrimp.

You can also make it with some fish (like salmon)

Now just eat. Soy sauce is to sop sushi in it a little - just a little as it's very salty.

You eat ginger between different kinds of sushi to clean your taste (not everybody likes it)
