The Great Heartland Hauling Co. is very clever, what they do with mostly cards and a few cubes. The Decktet is also interesting; a favorite is Magnate.

Monopoly Deal Card Game for a very fun and addictive little card game.
Decktet which leads to the already mentioned Magnate, among others.
Las Vegas, it's basically just dice.
Stop the Germs!, very nice little (PNP) game.

Sounds like Roll Through the Ages would be a good addition. Escape: The Curse of the Temple is fun if you want a quick real-time co-op.

Kolejka Cool theme with light game play.
Rapa Nui
Jamaica Neat racing game accessible to kids, and it also has amazing artwork.

Ticket to Ride: Europe

Almost everyone (children, teenagers or adults) I've played these games with has enjoyed them.
Both games are simple but somehow manage to exceed the sum of their mechanisms.
