Veto is marked as being used during an opponent's turn. Does this mean that, should an opponent Veto a card that I played, I can't Veto the Veto? On the other hand, if I play a card on my turn that get's Veto'd, can someone else Veto that Veto?

That's the way I understand it, yes. Though I hadn't considered the possibility of vetoing a veto when it was the turn of neither vetoer.

You can only Veto a Veto when it isn't your turn. Ditto for your opponents.
