This is a creature with a bulls eye right on it if I have ever seen one.
I would make sure to summon it as far away from the enemy mage as possible to not risk it dying before it has a chance to absorb fellow zombies.

Question on Innate Life.

When a creature grows, does it gain +3 to both current life points and maximum life?

For example, if Shaggoth-Zora has 2 damage markers on it (current life of 4), but grew, would it then change to 7 Life, with maximum of 9?

Yes. If total life increases, then remaining life of a creature will also increase by the same amount.

That applies to regular Life gain as well as Innate Life. Whenever your Life increases, damage stays the same. You don't add more damage to something just because it's life went up.
