I come from Cheeseland. I live in Cheddarstan. I've seen every variety of cheese known to man, and tried many of them myself.

But I've never seen anything called "Nacho Cheese."

I've heard of people melting down a bland cheese-like substance and throwing in some jalapeños or mixing it with salsa; but that's just manipulated cheese-like substance.

I want to believe in the existence of a pure, unmolested Nacho Cheese variety. Help me, Mulder!

 


Drew, what do you consider the quintessential cheese to melt on nacho chips? A cheddar, monterrey jack, mozza mix? Throw in a dollop of gorgonzola? Perhaps a touch of jarlsberg? What is it?

Nachos are named after the man that invented it, Ignacio "Nacho" Anaya. It's not the cheese, it's the dish.

The wiki entry also discusses "nacho cheese". It was a dip.

edit: And nachos sound really good right now.
