The lonsword card says "For your combat check, reveal this card to roll your strength or melee die +1d8..."

Does that mean I can choose between my strength die and 1d8?

For example Valeros has a d10 for strength, would I roll a total of 2d10 or a d10 and a d8?

For Valeros you would roll either d10 + d8 (your strength) or d10 + 3 + d8 (your melee skill). Obviously for anyone who actually has a melee skill you would choose that option.
In all cases the longsword adds an additional 1d8 to the roll.

Right. So Valeros has Strength d10 and he has Melee: Strength +3

So your best choice is to use his Melee which allows you to roll a d10, add the +3 then add the longsword which gives you another d8.

So Valeros with the Longsword in the Kitchen is d10 +3 +d8
