Pretty much as the title says, I'm looking for a game that works well with 2 players (although it doesn't have to be 2 Player only) & has Copper as one of the resource types (or theme).
Bonus points if there's a sense of building or creating something.

Easy availability in the UK is a strong plus

What an obscure request - I like it! What about Brass: Lancashire? Ok, it doesn't have copper but you could pretend the iron to be copper... then again, it's not strictly two player, but there is a variant where you just cover a part of the board and it works reasonably well... this is one of the best games ever, get it! now!
