So there's an attribute some songs have that I have no idea what to call it. It's in only two songs that I have been able to think of (I've been trying to find it and asking people for about a week now).

The idea is that the song completely changes just for the last 30 seconds to 1 minute (or so) of the song, to a round of music that hasn't been in the song at all. I don't know if that wording really describes that very well, so I'm going to post the songs.

The first is Black Water, by the Doobie Brothers. Go to 3:05 for the shift.


And the other one is Boondocks by Little Big Town.

The change is at 3:14 (happy Pi Day, everyone!).

So, are there any more songs like that?

Suite Judy Blue Eyes, being a suite and all.

My favorite example is "Aeon" by Neurosis. There are five different sections across ~10 minutes, going quiet-loud-quiet-loud-quiet.

Chicago's "Feelin' Stronger Everyday" has this occur around the 2 minute mark of the song.

When it happens at the end of the song (and it can go on-and-on and feel like half the song) it is generally referred to as a coda. Some of the songs listed above not only contain a coda, but distinct movements, so the music may change throughout the piece (e.g. Thick as a Brick). The concept of a coda as a complete musical expression has been around for some time. Often it feels "bolted on" (See ELP's Lucky Man) and I think that some artists just use unfinished songs as codas.

The Pixies' thing was always to have a tempo and volume switch between the refrain and the main song. The switch was usually very sudden. That's similar to having a change for the coda, but it happened at different times (and usually happened multiple times since the refrain is repeated).
