I suggest that you get at least 1 of everything, in the order that they were released.

So, start with Wave 1:

X-Wing Expansion
TIE Fighter Expansion
Y-Wing
TIE Advanced

Then Wave 2, then Wave 3, then Imperial Aces.

Although the Millennium Falcon is really nice to have right away and that is wave 2.

If you provide ships for both sides, then another core set (cheapest way to get more ships, especially if you find them at a sale). If you fly casual, maybe TIE Advanced and B-Wing. They balance each other in point values and provide alternatives to builds. But read up on the ships and go with whatever you fancy. However, if you do provide ships for both sides, try to keep some balance.

I went with
1. Core Set
2. Another core set after playing once (they were on sale)
3. Y-Wing and TIE Advanced (for Darth Vader!)
4. B-Wing and TIE Bomber
5. This week Imperial Aces and Millennium Falcon

So, there is no requirement to go in the order of releases.

Edit: I also got the genuine TIE Fighter Expansion and X-Wing expansion cards in a trade. I used printed versions before that. You only need the actual cards in official matches, for casual play you can just proxy the cards.

The current meta for competitive lets you skip a few models, but there are upgrade cards that are only available on certain ships.

When I say Current Meta, you have to understand that things change, and there are many folks making interesting builds that might be tomorrow's king of the meta.

Wave 1:
Tie Fighter: Howlrunner comes in the expansion
Tie Advanced: Still skippable
Y-Wing: Still skippable
X-Wing: Wedge comes in this expansion

Wave 2:
Tie Interceptor: We keep trying to make this work, but if you look at tourney results... The inclusion of Push the Limit upgrade in the Imperial Aces expansion makes this more attractive.
Firespray: Still competitive, just not the king anymore.
A-Wing: If you get Push the Limit from the Imperial Aces expansion, skipable.
YT-1300: Still a top-tier ship.

Wave 3:
B-Wing: Current King of the Meta
HWK-290: I used to hate this ship a lot, but a few players, including a store champ are finding ways to make it work. I can't say it is top tier yet, but it has upgrade crew that also work on other ships, so it is worth a look.
Lambda Shuttle: Currently the only way to get the Advanced Sensors upgrade that helps a lot with the B-Wing's current supremacy. Some folks swear by this ship but it isn't winning tourneys.
Tie Bomber: Folks are trying to make it work. Frustrating to play against, but hasn't been in a top tier build yet.
