This is covered in the supplemental instructions, page 5. The thief draws the item pictured, and if it is a combat item can use it in combat against the player. Then if you defeat him, you get the drawn die.

So if there's a locked chest icon, that means the thief draws an artifact, uses it in the fight, and you get it if he is defeated. If there's a key, he selects a key from the one-use bag. And so forth.

Ya know, I'd read page 5 and it just wasnt clicking until you posted this and I looked closer at the die.

The die itself has the symbol on the face, each game being a different symbol.

So you roll.
And the Thief draws a die matching what ever symbol matches that on the die face.
If it's a combat item it rolls it along with the monster level dice.

Either way Victor gets the item.

And the chest on the Thief die is an empty chest.
So does the their just scamper away.
Basically like you didn't actually see the Thief, only the empty chest he already looted?

Correct; if you happen to roll the empty chest face, you found the pilfered chest but missed the thief himself (and thus basically have a wasted turn).

And the thief die gets dropped back in the monster bag correct?

Unless you roll a face that's red or black (I think there's a red face, if memory serves), in which case he's a trophy and worth fame.
