I dislike games where you wait and wait for your turn to come around.

I love co-op games for that reason but I am not so knowledgeable on other types of games where you are involved in every turn or there is no downtime or almost no downtime.

I dislike party games, so you can skip those recommendations.

Please recommend me some of your favorites!

I'll recommend Würfel Bohnanza as a favorite. Also, while I haven't played it, Port Royal looks fun.

I've always enjoyed Space Dealer, which has been reimplemented as Time 'n' Space.

Race for the Galaxy has basically no down time except when everyone is selecting their roles for the round.

I've been surprised at how little downtime there is in Euphoria: Build a Better Dystopia as well. People's turns will generally only last a few seconds, a minute tops.

Walnut Grove is mostly simultaneous - you can each add tiles to your board simultaneously, and add resources. You have to take turns during the town phase, placing workers, but then the winter phase, feeding and heating, can be done simultaneously.

Port Royal is fun. The downtime is almost non-existence although there's a slight downtime when a player pulls out too many card and never bust.

Other games that I like:

** I treat Würfel Bohnanza as a party game, so maybe my definition of party game is a bit derailed.

What kind of playtime are you looking for, and what will the (range of) number of players be?

Our favorites of heavier games where you're constantly involved are BSG (2-3h, 3-6 players, best with 5) and Cosmic Encounter (1-2h, 3-5, best with 4+, each expansion adds new aliens and pieces for an extra player).

Actually, most of the games we play are like that - you are either involved directly, you are suggesting options, you need to keep track of what is happening, or games with minimal downtime to begin with.

Check out the Simultaneous Action Selection mechanic section on BGG.

The top rated/ranked games there include 7 Wonders, Race for the Galaxy, The Resistance, and Game of Thrones.

Puerto Rico (kind of). It does proceed in turns, but the action one person chooses allows everyone else to take the same action. There can still be a little downtime if someone has analysis paralysis really bad, but you're pretty much constantly being called upon to make a decision. That's the best one that comes to mind.

Also consider:
Among the stars (similar to 7 wonders, but in space)
Cosmic encounter (you're involved constantly in everyone's turns, eliminating much downtime)
Dice town. A lighter game of your description, but still fun.

Galaxy Trucker is the epitome of downtime for me. I build my ship and then just sit there and wait to see what happens, making almost no decisions.

I hate to tell you, but it definitely has downtime. The drafting before the game starts doesn't, but I got rid of this because AP was making 4 player games last 2+ hours. The concept and artwork was very cool though.

Some of the games I like in this genre are:

Jamaica: The first player rolls the dice, then everyone performs actions based on the result. This game handles up to 6 players.
Nuns on the Run: This games has the novices playing simultanously to outrun the nun guards (played by 1 or 2 players). On their turn, all novices play simultaneously and write their movement on a personal sheet then roll for noise (so the guard player remains interested during their turn). On their turn, guards try to catch the novices. Since the novices' tokens are not on the map, he has to ask them whether they were seen. Plays up to 8 players.
VivaJava: The Coffee Game: This one is getting harder to find, but is well worth it. The game can last longer the first few times you play, but most actions are simultaneous. The first part of the game, you place your workers to create teams with whom you'll try to brew coffee or research. Then, the three team decide simultaneously what to do and perform their actions. Afterwards, points are counted and a new turn starts. Although the theme might seem strange (you're not battling dragons or creating a perfect economical engine), the game is fun, strategic and turns are full with tension. It plays up to eight.
