What games are there where something gets built and it's pretty satisfying. Galaxy Trucker would be a good example, although even something like the building of a city in Blue Moon City looks pretty fun coz you're constructing a whole city gradually. The closest game to it that I own is Starships, but the ships you build you don't feel too much of a connection with because I guess they're just composed of randomly drawn cards.

The higher player capacity, the better. Not interested in anything less than 4 player games.

Depending on how people approach it, in Airships players can build the Hindenburg.

Arkadia works too, since you're building up the palace and the game is over after the building completes the third level. Also an amazing stock game once you get the actual mechanics and scoring system down.

There are some good city building games; Blue Moon City might be considered a city 'rebuilding' game, I guess.

My favorite remains Big City, but it's been out of print for many years. Each game of Big City is different because the layout of the city literally changes with each play. We usually talked about it after each game before we took it down to pack away.

The game often credited as being the father of Big City is Sid Sackson's Metropolis, which plays adds bargaining and trading to the development of the system.

At first I thought you were talking about Starship Catan, but then I realized you must be describing a different game. Starship Catan constructs spaceships similarly to Galaxy Trucker, but it's only a 2-player game.

Other building games include:

Utopia

Mexica

Giants

In World Without End, players are trying to contribute in building structures on the board. Players who did contribute will get VPs, with players helping more getting more VPs.

The structures are represented by overlay pieces, which you use to cover the gameboard.

Sunrise City - solid Euro building-game with interesting scoring system.

Skyline - light, rather easy with unexpectedly many strategis to go for

Blueprints - once again dice, Euro-game, also not complicated bu rather good replayability, imho.

At the end of the game, it's great to look over each players burrough, as they all take on a distinct personality. The expansion makes it even better!

Through the Ages: A Story of Civilization, you build your civilization. Might sound trolling, but I'm dead serious. You could retheme the game to be about running a business and it would work identically (I guess the war/aggression stuff would be underhanded acts of sabotage?).

As far as engine-building games though, nothing comes close.

Plays up to 4 but you'd only want to do that with 4 experienced players. This game is my desert island game, though. Endless replayability

Build rockets....if you can figure out how to get them to move long distances, it's very satisfying.

Mentioned above, Sunrise City has you laying out the districts for a city and then building floors of buildings. Due to the really thick cardboard of the building tiles you get a great looking 3D city at the end of the game.
