All 3 seem to be similar (based on my quick previews). Has anyone played all three? If so, which do you prefer and why?

Which would work best with 2?

Only played Splendor and just bought Port Royal, Machi Koro due to some text didn't catch my attention

Both of them i think it could work well but if I had to go with one i will first go with Splendor, cause apparently can be less lucky than Port Royal imo and would say that plays really well with two even if i only tried with four

But you should wait for more experient users to clear all the doubts

I've played Machi Koro (2-4 players) and Splendor (only with 2 players). Both were reasonably enjoyable for what they are--quick filler games--but I much prefer Machi Koro.

I found the dice-rolling, coin-collecting, engine-building in Machi Koro much more fun/exciting than the chip-taking, gem-collecting, engine-building in Splendor. Both games are a race to a certain end-game condition and I feel like there are more routes to the finish line in Machi Koro than there are in Splendor.

The dice make Machi Koro very exciting. I find Splendor to have a very different feel. I recommend both! They can really make a game night feel like a casino night.

I was wanting Machi Koro for awhile, but didn't want to wait. I found Boomtown and it has the Cataan-esque roll for resource mechanic that Machi borrows. There's a bit more interaction with bidding and abilities that can now up other players.

Thanks to all who replied. Boomtown only plays 3-5 and I need a two player (primarily). But it does look good.
Of the 3 I mentioned, Machi Koro looks the most promising to me. Splendor visually looks the best but I read from several sources that while it's real fun at first, it gets old fast.
The other two look more interesting in gameplay, notwithstanding they look more boring visually. And of those two, Machi Koro looks funnest to me, so far. Unless others wish to chime in, I may have to go that route.
