I'm a pretty conservative guy when it comes to my Star Wars, so much of the EU stuff I treat with skepticism. Nonetheless the new Ties actually look pretty cool, and the HWK seems like it opens up some really interesting play options for the Rebels.

What I have so far is:
6 X-Wings (I know, 2 too many at least... any body want some?)
3 Y-Wings
3 A-Wings
3 B-Wings
1 Falcon
1 Transport
1 Corvette

8 Ties
3 Interceptors
3 Tie Advanced
1 Shuttle
1 Firespray

Should I get the HWK to mix stuff up for the Rebels, and the Imperial Aces, so I can fly more elite Imperial stuff and rely less on Tie swarms?

Should I get 3 Tie Bombers because they're the last cannon ships I don't have and the Imperials could use the punch when taking on Huge ships?

Should I get 2 Tie Defenders and a Tie Phantom because cloaking is awesome and that's another way to give the Imperials some non-swarmy options?

Maybe I should max the variety I own and get a HWK, Phantom, and Defender?

Or concentrate on less variety, but filling out Imperial options and get a Phantom and Aces?

I only play casual, and we print out builds with proxy cards, so getting multiple of a card is not a consideration, but I do need the models to field particular fleets.

Any perspectives would be appreciated!

Do you have any other folks in your vicinity to at least try some of the ships you've listed?

If not, I'd recommend getting 1 of each imperial (bomber, phantom, defender) and then seeing if you take a shine to any specialist squadron.

Even a single copy of each will have some interesting options to test:

Captain Jonus, from the bomber pack, will allow you to explore some secondary weapons options with your tie advances.

Echo, from the phantom expansion, has an insane movement scheme, and would probably be a good accompaniment to an elite interceptor squad.

Finally, the defender will benefit from the cluster missiles you've picked up from your advances and a-wings. While expensive points-wise, the defender can be outfitted to fill a variety of niches within the squad ~ close-in dog fighter, missile boat, hit and run fighter, etc.

If you own 3 Interceptors and do not mind using proxies you will not need the Imperial Aces.

The HWK is a support ship similar to the Lambda Shuttle. I like it.

Bombers are nice cheap missile carriers and it is probably nice to have some. Tie Advanced play a similar role but are much more expensive.

I don't have much experience with the new ships. They are relatively expensive in points, so maybe one of each is enough.

How come Bombers are always suggested in pairs? I've seen it mentioned a couple of time (and was suggested to me in another post) but not sure on the mechanics/logic of taking them in pairs rather than on their own?

My first thought is so you can take Jonus for rerolls on the other bomber.

I've seen bombers used as hardier mini-swarms, too. After the ordo is spent (if you take any), 2 ATT is lackluster on its own (against high AGI targets).

And, in general, when more of your ships use the same dial, the easier it is to keep them flying properly.

Just a few guesses. Can't really speak to other posters' reasoning.

Thanks for the advice, seems like I'll likely go with two bombers and a HWK.

It hadn't occurred to me before that I might not need a full wing of three bombers, but thinking on it I realize I do tend to fly a lot of ships in pairs.
