This is a great game, I am thinking of expanding it to more players. I realize I'll need more meeples, 2 boats, and more coins. Is that enough though? Are there enough cards in the game that everything will play normally?

I bought two copies during the KS, but have not found people to play it two player yet. One deck will play 4 player fine according to the rules. There are 3-4 player rules posted on the Island Siege website, and in the files section here.

As I understand you need two copies of the game to play 3-4 players. What about the 2 expansions (Island Siege: Coquina Expansion & Island Siege: Rampart Expansion), do you need 2 copies of those also?

No, just one copy will be fine. All cards in the game should remain unique one-offs.
