I'm looking for games that play really well with 2 players:

around 60 min (or less)
around 2.5 to 3 weight
no supernatural themes
not too much luck (some is ok)
replay value
possibly random/different setups

Can't wait to see what you guys suggest!

The Castles of Burgundy will be around an hour once you get the rules down. It fits your other criteria.

Splendor - Currently out of stock most places, but a new print run should be coming soon. It's a little lighter than your requested weight, but fits your criteria otherwise. Very fun game!

any of the GIPF Project games aand many other abstracts -Volo is a favotie
Floriado you can do your own version to try it

I would recommend Louis XIV, an oldie and a goodie. My wife and I played it over the weekend. It incorporates a virtual third player, but it doesn't get in the way too much and certainly isn't very fiddly.

Jambo is a great game. If you have trouble finding it Asante is a stand alone expansion that is readily available. I have both and love them equally.

Ubongo: Duel or even the more costly but even more fun Ubongo 3-D, YINSH, and Innovation are a few others that come to mind.

+1 The Castles of Burgundy

Catan has a two-player card game that is fun.
Love Letter.
Lost Cities.
Citadels.

I've enjoyed two-player Puerto Rico and Agricola. Lords of Waterdeep and Power Grid are fun with two players.

I started out buying games that were in the 2-6 player range so I could always have the option to play the games at home with my wife.

Oh, and a quick note on ubongo duel and 3D, they are both OOP here however you can get the German versions online at similar prices to what they were going for originally. They are not language dependent so it's not really an issue and there is no text on the game pieces.

My wife and I share similar likes with you. Agricola: All Creatures Big and Small is a little bit under your desired weight (2.4) and a little shorter but offers the rest of what you are looking for once you add one of the expansions. We almost always play twice.

My wife and I have played and enjoyed the following:

Lost cities...probably the most played.
Balloon Cup...my wife's favourite.
Babel...my favourite.
caesar and cleopatra...brilliant battle of wits.

Although some of these are out of print they are still readily available.

Nobody mentioned Dominion yet?
Ok, the weight is listed at 2.4, but if you add in an expansion or two, that should go up to your desired level. It passes all your other criteria; the random setups and the resulting replay value are especially great (moreso with an expansion or two).
When my wife and I first got to know it (with the first three sets available), we didn't do much else than sleep, work, eat, and play Dominion for a few weeks.

We personally prefer Ascension: Deckbuilding Game to Dominion, which also has many expansions and versions.
