Assuming I provided the tokens does adding a 6th player make a big difference to game length or break anything I may not be aware of?

I've not actually tried it, but I think in practice it would work, it just may make the game end sooner as the deck would be run down quicker. You may also want to consider adding one more creature to the fight, but I'm not sure that would be strictly necessary.

Thanks for the feedback. I actually want to use it as part of my D&D game as an arena tournament and I have 6 players - so no issue if it goes quicker.

More than going quicker, I'd be worried that there wouldn't be enough monsters for everybody to get bets in. Especially in the first round you want a lot of choices for bets, but if everybody puts one down, the last few players will be pretty badly constrained. I think another monster would be a good idea.
