A simple question: why the colored dice? Why did they go with the colors instead of just saying "roll N dice"?

Because some cards read results from certain colored dice when rolling multiple dice.

And later expansions add elements that let you reroll or otherwise affect certain colored dice.

Plus, the multicolored dice are just that much cooler.

Also, in some circumstances you roll all the dice and whichever color is highest means you get something from that colored supply. AKA green is cabbage, blue water, orange carrots, etc.
