I have not tried this yet but will sometime soon.

If you chose to end your turn having just rolled some feet, then you may take those dice out of the dice pool until your next turn begins - you just keep the dice in front of you. At the start of your next turn you put the dice back into the container before drawing.

This reduces the dice pool for other players for the next round. Of course, by chosing not to re-roll the feet you are forgoing the opportunity to roll more brains, but you may (depending on the state of the game) think that its better to remove a green dice from the pool for a round rather than reroll it for another brain.

Conceptually, removing the dice is where you muster the enormous willpower to run away from the shotguns, making it more probable that the other zombies will get shotgunned rather than you.
