I am going to run a 4-player game in a few hours here and I'm torn on how to set up the map. I feel like resource poor maps tend to lead to a bit more interesting games. (Think this amount of planets per person, i just don't like the setup: http://www.astralvault.net/games/SA/Maps/4-Breach.png).

I am looking for recommendations for how to have the players set up the map and what variants to use while doing so. Should I run a normal setup for four players with the sides of the map chopped off? (Something like this: http://ti3pbf.com/ti3web/mapview.php?id=105&mode=load). Another option I was thinking of was doing star-by-star variant with fewer planetary systems and more empty/specials. If you think this is a better option, how many of each should I add?

Any other suggestions would be great as well. I just think that the default setups for 3 and 4 players offer way too much space to sit back and do your own thing, rather than interacting with your neighbors.

I've played dozens of 4 player games with vanilla set up and never found interaction a problem. I make sure I play with all the wormholes and artefacts. The added resources can often create more conflict. Players may be less risk averse as they are able to rebuild their fleets more quickly.
