Here at the Geek there is a great list of games with modular boards. However, there's nothing (that I can find anyway) that lists games where the board is built piece-by-piece as you play (not just at the start). The one I know of is Mage Knight, and that's great. But there's got to be more. I'm not looking to limit this by a particular theme, just the mechanic.

Betrayal at House on the Hill does this.

How about games where you build the modular board at the start, but flip tiles to reveal what they are as you play? Nexus Ops does this.

Edit: Eclipse builds as you play too!

StarCraft: The Board Game builds the board at the start, but there are special effects that can be used during the game to somewhat modify the board by switching the endpoints of "z-axis" routes.

Zombies!!! isn't well-loved on the Geek, but it fits the description.

...well personal board so a stretch but its more than a stat board like other games that have you collect and put on your own card. You have to pay attention of hour your building out.

Nexus Ops tiles are completely revealed before play starts. Everything is flipped when building the board to randomize the locations of the different terrain, but then it is all flipped over for everyone to see. This is somewhat important when determining which units to bring in since some of them have different advantages/disadvantages on different terrain.

Archipelago is a great (and beautiful example).

New Dawn also has that element. You place the board on the table and the spaces on the board a defined by the locations you play on them. Once a location is placed on a space it defines that space for the rest of the game.

Dragonscroll lets players build the board by placing tiles.

In Glen More you use tiles to build your own board an activate spaces of your board.

Can't speak for that game, but it did make me think of Room 25 where you set up the board and reveal rooms as you play

And Martians!!! if you consider it a differnt game.

Caylus has a road of buildings that players build throughout the game. These building choices are what make each game different.

Same board but different functions on the board depending on what players build.

And Caylus Magna Carta does away with the board part - you just build the "board" from cards.

I suppose one could say that Keyflower fits this category, but perhaps not in the sense that you are thinking of since there are individual villages being built (with no movement of player pawns around on the board really).

Another couple of suggestions that are (perhaps) more in line with what you are thinking of might be Akrotiri and Expedition: Northwest Passage.

As you can see, there are tons of games that fit your description, but do you really need any other than Mage Knight?
